Cranberry CupcakesThis recipe is so deliciously light and fluffy due to the use of buttermilk.  The acid in in the buttermilk reacts with the SR flour to create lots of air bubbles which is why it's important to gently fold the mixture and not beat it.  Folding it will retain the air bubbles which makes the cupcakes light and fluffy.
Potato and Rosemary Wedges with PaprikaA great chippie alternative to the store bought variety that are generally energy dense and nutrient poor. Delicious served with our 3 Spice Fish and a green salad
Mango Lime and Chilli SalsaThis is a refreshingly light and nutritious spring and summer salad to have with your favourite meat such as fish, chicken or lamb or pork.  It is also great for variety at your next BBQ.
Mexican Bean and Rice Salad with AvocadoAn incredibly well balanced and highly nutritious salad that can be served as a main, meat free meal with a green salad or as a side to your favourite meat such as BBQ lamb. Vegans can omit the yoghurt or replace with a vegan yoghurt.
