Apple and Berry Crumble

Enjoy a healthy twist on the traditional apple and berry crumble! With the addition of oats and whole fruit, this dessert offers almost one quarter of our daily fibre needs.

 1 Cup rolled oats
 60g Butter, softened
 1/4 Cup self-raising flour
 1/4 Cup coconut, desiccated
 1 Tbsp. honey
 125g Mixed berries (frozen or fresh)
 3 Medium green apples, unpeeled
 2 tsp. Cinnamon
 1 Tbsp. raw sugar
 2 Tbsp. water

Pre-heat oven to moderate (180°C)

Slice apples into cubes and place into saucepan with berries, water, cinnamon and sugar

Allow apples to simmer over medium heat for 5 minutes or until softened, stirring occasionally

In a separate bowl, add the rolled oats, butter, self-raising flour, coconut and honey

Rub ingredients together with fingers until well combined

Add softened apple to a small-medium baking dish

7

Sprinkle crumble mixture on top of the apples

Bake for 25 minutes or until golden brown
