Chicken Breast and Asian Greens in a Citrus Wakame Broth with Soba Noodles

This powerhouse of a broth will warm your bones, heart and body full of flavour and goodness. Your family will be asking for you to cook this for eternity!

 2 tsp Peeled and grated ginger
 1 Medium red or green chilli, de-seeded and sliced
 2 Kaffir lime leaves, whole
 1 tsp Sesame oil
 2 tbsp Wakame ( or other seaweed)
 4 cups Chicken stock, salt reduced
 200 g Chicken breast, sliced
 1 tbsp Fish sauce
 2 tbsp Lime juice, freshly squeezed
 2 Stalks of spring onion
 90 g Soba noodles
 2 cups Water, and extra if needed
 1 cup Bean Sprouts
 1 Bunch Kai Lan or other asian greens, sliced
 ¼ cup Fresh coriander to garnish

Place the sesame oil, ginger, chill and lime leave in a large saucepan

Simmer until fragrant (about 2 mins)

Add wakame, chicken stock, chicken breast, spring onion, fish sauce, lime juice and simmer on low heat for 10 minutes

Add water and noodles and simmer for 2 minutes

Add greens and sprouts and simmer for 2 minutes

Serve hot in a bowl garnished sprinkled with fresh coriander
