Gluten Free Pistachio and Lemon Biscuits

These biscuits are so delicate they almost melt in your mouth. The tang of the lemon pairs beautifully with the nutiness of the pistachios. They will soon become a family favourite.

 1 Cup gluten free self raising flour (or normal SR flour)
 1/4 Cup quinoa flakes
 60g Crushed, unsalted pistachios
 1 tsp Lemon Zest
 100g Softened butter
 1 large egg
 1/3 Cup castor sugar
 1 tsp. Vanilla essence
 2 Tbsp freshly squeezed lemon juice

Preheat oven to 180 degrees Celsius (moderate oven)

In a large bowl gently mix flour, quinoa, pistachios and lemon zest with a whisk until well combined

In a separate bowl use an electric beater to beat butter, egg, sugar, vanilla and lemon juice until the sugar has dissolved

Add the wet mixture to the dry ingredients and mix well to form cookie dough

Wet your hands and then roll dough into small balls and place on a lined baking tray

Bake in a moderate oven for 20 minutes or until cookies have slightly browned
