Home-Made Pizza Sauce

A simple pizza sauce using easy to buy ingredients. Use on your favourite pizza base and make it in double batches to freeze for convenience.

 1/4 Cup red onion, finely chopped
 3 Cloves garlic, crushed
 10 Basil leaves, finely chopped
 10 Oregano leaves, finely chopped
 1 x 400g Tinned tomatoes
 1/2 tsp. Sugar
 1 Tbsp. extra virgin olive oil (EVOO)

Place EVOO in small saucepan

Add onion, garlic, basil and oregano

Fry on medium heat for 2 minutes

Add tomatoes and sugar

Simmer without a lid for 20 minutes, stirring regularly until liquid has slightly reduced to a thick paste consistency

Use as a sauce for your favourite pizza base

Top with your favourite foods such as cheese, spinach, capsicum, mushrooms, etc

Onions and garlic are known as a pre-biotic which help promote the growth of good gut bacteria.

Tomatoes are full of lycopene which is an anti-oxidant.  Anti-oxidants help to neutralise free radicals which cause damage to cells by oxidation.   Eating a diet high in anti-oxidants helps to reduce the risk of disease such as heart disease and cancer.  Tomatoes cooked and served with EVOO improves absorption of lycopene as it is a fat soluble compound.
