Mango Lime and Chilli Salsa

This is a refreshingly light and nutritious spring and summer salad to have with your favourite meat such as fish, chicken or lamb or pork.  It is also great for variety at your next BBQ.

 1 Large mango, peeled and finely diced
 1 Tsp of red chilli, de-seeded and finely chopped (or more if you like things spicy)
 1 Tbsp. freshly squeezed lime juice
 1 Handful of chopped coriander
 4 Grape cherry tomatoes, finely chopped
 1 Medium avocado, finely chopped
 Pepper to taste

Place all ingredients into a medium sized bowl and gently mix together

Many kids who don't eat veggies love fruit.  One of the main nutrients we get from veggies is Vitamin A and mango is jam packed full of Vitamin A so this is a great alternative for them to eat (just omit the chilli).  It's also a fantastic source of fibre, healthy fats and Vitamin C.
