Pear, Rocket and Pancetta Salad

A few simple ingredients come together in an unexpected way to create a delicate and light lunch.

Vinaigrette
 1 Tbsp.red wine vinegar
 1 tsp. Honey
 1/2 Tbsp. fresh lemon juice
 3 Tbsp. extra virgin olive oil (EVOO)
 Coarsely ground black pepper to taste
Salad
 4 Slices thinly sliced pancetta
 1 Tbsp. olive oil
 2 Firm/ripe pears, thinly sliced
 4 Cups rocket
 4 Tbsp. parmesan or pecorino, thinly shaved with a vegetable peeler
Make vinaigrette:

Place all ingredients in a small bowl or screw top jar and mix/shake until well combined

Make salad:

Fry pancetta in EVOO over moderate heat, turning frequently, until just crisp, about 5 minutes

Transfer pancetta to 3-4 stacked paper towels to drain and cool then tear into bite-size pieces (pancetta will crisp as it cools)

Halve pears lengthwise, core, and cut lengthwise into 2cm-thick slices

Add rocket, pears, pancetta and cheese to a large bowl and mix

Pour salad dressing over the salad and mix well

Distribute even amounts of salad into serving bowls and serve

This is a great lunch recipe for work.  Simply dress it when you are ready to eat it.
