Potato and Rosemary Wedges with Paprika

A great chippie alternative to the store bought variety that are generally energy dense and nutrient poor.

Delicious served with our 3 Spice Fish and a green salad

 6 Small potatoes - white variety
 2 small sprigs of rosemary, finely chopped
 1/4 tsp Paprika
 1 Tbsp. extra virgin olive oil (EVOO)

Chop potatoes in to wedge shapes

In a large mixing bowl or large freezer bag, combine all ingredients until potatoes are well coated

Place onto a lined baking tray

Bake in a moderate-hot oven for 20 minutes or until potatoes are golden brown and cooked

Serve with your favourite protein such as fish or chicken

You can use sweet potato as well as other varieties of potato in this recipe.

You can also use other spices such as cumin, pepper or chilli flakes to flavour the wedges.
