Super tasty and healthy fruit and nut balls that area high in fibre, magnesium, good quality fats, and a little protein. They will stay fresh in the fridge for a week so a great alternative for those mid-afternoon snacks.
Finely chop all ingredients and add to a medium bowl. (You can also process in a food processor)
Mix all ingredients together until well combined and holding together
If necessary, add a little water to bind the ingredients - a dash at a time to avoid being too soggy
Place chia seeds into a shallow bowl
Roll mixture into small, bite sized balls
Roll in chia seeds until evenly coated
Keep in an airtight container in the fridge for up to one week
