Rocket, Strawberry and Feta Salad with Dry Roasted Pine Nuts

Looking for a colourful and fresh salad that you can impress friends and family with? This delicious has all the colours and flavours of Xmas.

 2 cups Rocket
 10 Snow peas, tails removed
 1 Medium Lebanese cucumber
 10 Strawberries, hulled and sliced
 ¼ cup Reduced fat feta cheese, Danish or Greek
 1 tbsp Pine nuts
 Handful of chives and parsley, chopped

Place pine nuts in a dry (no oil) non-stick pan and fry on the stove until lightly golden brown (about 2 mins). Set aside

Place rocket in a medium salad bowl. Add remaining ingredients, including the pine nuts

Dress with our White balsamic, Dijon and EVOO dressing and toss to coat.
