Slow Cooked Beef with Guinness and Prune Juice

This unusual combination of beef, Guinness and prune juice creates an intense and rich flavour that makes it the perfect casserole on a cold winters night. Try it, you'll love it!

 800g Chuck steak, diced
 440ml (1 can) Guinness or other stout
 500ml Prune juice
 6 Shallots, large, peeled
 12 Baby potatoes, unpeeled
 4 Cloves garlic, peeled, chopped
 1 x 200g Punnet mushrooms, swiss or brown, chopped in quarters
 1 Cup peas, frozen
 2 Bay leaves
 1 Beef stock cube, reduced salt

Add all ingredients into a large pot. Gently stir until well combined

Simmer on the stove with the lid ajar, for 2-3 hours or until the steak has softened and is easy to chew. Be sure to stir occasionally. You can also use a slow cooker

Serve warm with mixed veggies such as carrot & cauliflower

The nutritional profile of this recipe is surprising.  42 grams protein, 7 g fibre which is 25% of your RDI, low in fat & sodium and it contains almost half of your RDI for Vitamin C.

Many people think that Vitamin C is lost in cooking, however some veggies retain it very well as shown in this recipe.

Also, the longer you cook alcohol, the more of the alcohol content is lost meaning that slow cooked meals made with alcohol is quite safe for the whole family.
