Flourless Sweet Potato Chocolate Brownies

A delightfully rich chocolate brownie that the whole family will love plus a great way to get veggies in to your kids!

 450g Sweet potato
 200g Almond meal
 1/4 Cup Dutch cocoa powder
 125g Pitted dried dates
 1/4 Cup honey

Peel, chop and boil sweet potato until soft. Be sure use the correct amount of sweet potato as if you use too much, it will not set.

Place cooked sweet potato in a food processor and blend with all other ingredients until mixture is combined and moist.

Spread mixture into a lined lamington tray and bake in a moderate oven for 20-25mins.

The brownies will stay fresh in an air tight container in the fridge for 2-3 days (if it lasts that long!)
