Very Merry Berry Jelly

An all natural jelly that contains no additives or preservatives unlike other jellies. Also a good source of vitamin C and lycopene.

 500 ml Fresh watermelon juice (about 1.5 kg of watermelon)
 1.5 tsp. Gelatine powder
 1/2 Punnet of fresh strawberries (or berries of choice)

Cut, prepare and juice watermelon

In a medium bowl, dissolve gelatine powder in 125ml of juice and mix to dissolve

Heat remaining juice (375ml) in the microwave for 90 seconds or on the stove until hot, but not boiling

Place chopped up strawberries or fruit of choice into small serving glasses or bowls

Pour warm juice into cold juice/gelatine mixture. Stir gently until gelatine powder has dissolved

6

Pour jelly and fruit into serving glasses/bowls and allow to set for 3-4 hours or overnight in the fridge

Watermelon contains Lycopene, a phyto-chemical which has anti-inflammatory properties.  Lycopene has been linked with good heart and bone health and a reduced risk of prostate cancer.

This jelly is all natural and contains no additives or preservatives unlike other jellies.

Both strawberries and watermelon are good sources of Vitamin C which helps to support our immune system.

                                                                                                       

This recipe is best served in small glasses/bowls rather than a large container.

You can substitute other types of juice for the watermelon juice.
