Sick of the high fat, creamy potato salads? Try our Warm Mediterranean Potato Salad that is so full of flavour you will be wanting to eat it every day.

 6 Medium potatoes
 1 Clove garlic, crushed
 ¼ cup Spring Onion, finely sliced
 ¼ cup Sliced black olives
 1 tbsp Capers
 ¼ cup Italian parsley, finely chopped
 ½ tsp Fresh thyme, stems removed
 3 tbsp EVOO (Extra virgin olive oil)
 1 tbsp Freshly squeezed lemon juice
 3 Medium Roma tomato, diced

Wash unpeeled potatoes and dice into 2cm cubes

Add potatoes to a saucepan and cover with water., Bring to the boil and cook until potatoes are soft, about 10 minutes. Drain from water and set aside

Combine garlic, spring onion, olives, capers, parsley, tomato and thyme in a large bowl

Ddd potatoes and gently stir until ingredients are combined

Mix EVOO and lemon juice together in a small cup and drizzle over the salad

Serve as a side with your favourite protein
